Sorry if this is a little big, it'll help my future exploits if no-one else's. :D

So today I made my first ever loaf of bread, using our newly purchased River Cottage Bread Handbook.

The book was very informative, especially for those who like to know *why* they are doing the different processes rather that just doing them. It goes into great detail on each process, and makes clear that you should master the basic bread recipe before you try anything else.

That's where the hard bit comes :D

It was never going to be perfect - it says in the book that the first loaf is a bit of a hit or miss thing. Luckily enough, the bread was ACTUALLY EDIBLE:



The only problem was that it was a bit too dense. I think I really panicked when I started to knead it - it was extremely sticky and most of it seemed to be in between my fingers, hardly any was on the actual surface at the start. I added more flour which did the trick, but I think I over-compensated which made it too thick and it may not have risen enough, which made a denser dough. Also, next time I'll have to get digital weighing scales as the ammounts of salt and yeast were far too small to measure on our mechanical ones.

Sorry for the slightly yellow tint in the following photos. I forgot to turn the white-balance on!

Here's a picture of it next to our usual Friday night tapas. It's great 'cos we all eat it over a few hours and there's not much washing up to do:

(Bread, Mortadella, smoked pork loin, milano salami, parma ham salami, prosciutto, mozzarella, butter.)

Here it is sliced. As you can see, it was a bit dense - but it still tasted lovely :)


How will the bread turn out next week? Watch this space for further developments! :D

How to make a Long Island Iced Tea:

1 part vodka
1 part 1800® Tequila
1 part rum
1 part gin
1 part triple sec
1 1/2 parts sweet and sour mix
1 splash Coca-Cola®

Mix ingredients together over ice in a glass. Pour into a shaker and give one brisk shake. Pour back into the glass and make sure there is a touch of fizz at the top. Garnish with lemon.

That's the point really - it was created so it looked like the ladies of Long Island who drunk it were merely drinking iced tea - whereas in fact they were secretly getting plastered :D

So today I made pizza, using the River Cottage Bread Book, which I'd thoroughly recommend.

I won't spare you the details (although If you want the recipe I can post it). But this time I used the bread maker to knead the dough rather than me doing it by hand - every other stage was done by hand, it just took the effort out of it. And I do think it was better for it.

So here was my first pizza - a margarita (tomato sauce, mozzarella and basil, although I forgot the basil ;)):


Here is an attempt to make it look more interesting:


And here was my second go - my favourite topping from our Oxford Italian restaurant - pepperoni and onion:


Overall it was definitely the best exploit I've had with bread-making so far. This might be because the dough didn't have to rise so much, but it tasted really authentic and I'd have been more than happy to have been served it in a restaurant. A pizza stone for the oven is essential and helps keep the heat.

I'll do that again! :D

It's actually cooler in the kitchen with the oven on and windows open than it is up here in my room. My computer chucks out so much heat.

Here's the bread! White this time and I left it to rise a lot longer just before it went in the oven so it was much more fluffy:


And here's a special fried rice I made last night - brown rice with egg, sausage, bacon, onion, prawn and peas :D
